Delicious, healthy peachy pancakes in 30 minutes.

Serves 4

Ages: 1 year and up

Prep time: 30 minutes

  1. In a medium bowl, whisk together 1-1/2 cups multigrain pancake mix, 1-1/4 cups milk, 2 tablespoons canola oil, 1 egg, 1 teaspoon ground cinnamon and 1-1/2 teaspoons vanilla extract just until lumps disappear.
  2. Stir in 3/4 cup peeled and diced organic peaches.
  3. Pour 1/4 cup batter per pancake onto hot griddle coated with cooking spray. Turn when bubbles form.
  4. Blend 2 cups peeled and diced organic peaches with 1/2 cup maple syrup until consistency of chunky applesauce.
  5. Serve your toddler 1 pancake with 3/4 tablespoon topping.
