Cinnamon-Maple Acorn Squash Canoes

If there was ever a way to make veggies irresistibly delicious, this is it. Best of all? These cute, sweet squash boats take only 15 minutes to make!

1 medium acorn squash
4 teaspoons unsalted butter
1 teaspoon ground cinnamon
4 teaspoons pure maple syrup

1. Cut the acorn squash into quarters. Peel and seed each quarter. Microwave on high in a covered, microwave-safe bowl for 6-9 minutes, or until squash is soft.
2. Top each quarter with 1 teaspoon unsalted butter, a sprinkle of ground cinnamon, and 1 teaspoon of maple syrup. For 2- to 4-year-olds, cut in quarters, half lengthwise and serve. For younger tots, dice squash into small pieces to prevent choking.
