Chicken Couscous




25 minutes Serves 4; for ages 3 years and up 1. Prepare 1 cup whole-wheat couscous according to package directions, replacing water with 1-1/2 cups low-sodium chicken broth. In large skillet, sauté 1/2 cup diced organic celery, 1/4 cup diced organic red bell pepper and 1/4 cup diced organic yellow bell pepper in 1-1/2 tablespoons canola oil. Microwave 1 cup diced organic red potato until nearly done; add to skillet and cook until all vegetables are tender. 2. Stir in 3 cups chopped organic spinach; 2 cups cooked and diced boneless, skinless chicken breast; 1 teaspoon lemon zest; 1 tablespoon lemon juice; and 1/2 cup low-sodium chicken broth. Stir until heated through. Combine with couscous and salt to taste. Serve your toddler 3/4 cup.
