“You can’t imagine how good this is,” says Stone. “The honey and sugar make a golden crust on the fruit, and the combination of hot nectarines and cold yogurt is fantastic. If you have some caramelized nectarines left over, they are just as good cold or mixed into a fruit salad.” Think your tot won’t like fruit for dessert? They will with this recipe!
Ingredients
4 nectarines, pitted and cut into quarters
1⁄2 cup (packed) light brown sugar
1 cup plain Greek yogurt
4 teaspoons organic honey
Directions
1. Preheat the oven to 500°F. Line a large heavy baking sheet with foil and spray the foil with nonstick cooking spray.
2. Place the nectarines, cut side up, in the center of the prepared baking sheet, and sprinkle with the brown sugar. Roast, basting once with the melted brown sugar, for 25 minutes, or until the sugar caramelizes and the nectarines are golden and slightly softened.
3. Spoon the yogurt into 4 bowls and top with the warm roasted nectarines. Drizzle with the honey, and serve.
